Aioli Garlic Mustard Potluck Potato Salad

Recently I’ve fallen in love with Trader Joe’s Aioli Garlic Mustard Sauce.  If you are a mustard lover you’re going to find that this stuff is so good you will be eating it straight out of the jar.

So when I was faced with the boring task of needing to make another potato salad I immediately thought of this mustard sauce and how I could use it. And I’m glad I did. This recipe serves about 16.

Trader Joe’s Aioli Garlic Mustard Sauce Potluck Potato Salad

4 lbs potatoes (I mixed it up by using 2 lbs red potatoes and 2 lbs yukon golds, scrubbed, but unpeeled for extra color and flavor, but you can peel the potatoes if you prefer).
4 stalks thinly sliced celery
1 medium red onion chopped
1/2 C chopped sweet or dill pickles
2 cups mayonnaise
2-3 tbs Trader Joe’s Aioli Garlic Mustard Sauce (I say the more the merrier)
2 Tbs Balsamic vinegar
1 tsp kosher salt
1/2 tsp fresh ground pepper

Cover the potatoes with cold water, add 1/2 tsp of salt, and cook over medium heat until just the right potato-salady texture. I like the potatoes not too mushy that they turn to mashed potatoes, but not crunchy either. Since I live at a high altitude your cooking time may vary. Cool.

To cooled potatoes, add sliced celery, chopped onions, and chopped pickles.

In a separate bowl, mix mayo, mustard sauce, vinegar, salt and pepper to taste.

Carefully mix together wet ingredients with potato mixture.

Potato salad is a perfect party food for the hostess because it is best if you make this a day ahead and allow it to sit overnight in the refrigerator before serving.

I garnished with sliced grape tomatoes and parsley.

The Best Potluck Macaroni Salad EVER!

The Best Potluck Macaroni Salad

Today I’m taking a hiatus from my usual Man Candy Fare to highlight Parties. It is always my goal to be a guest at my own parties. To achieve that, I strive to make as much of the food as possible in advance so I’m spending my time at the party enjoying my guests and not sweating it out in the kitchen.

I made this macaroni salad for my husband’s birthday party on Friday and it was a major hit with our guests, so I thought I’d share it with you today.  This recipe makes enough for a potluck of 20-30 people with enough leftovers for lunch the next day. Trust me, you’ll want those leftovers.
The Best Potluck Macaroni Salad
2 lbs elbow macaroni, cooked al dente
1 lb frozen peas, defrosted, not cooked
1 large red pepper, chopped 
1 medium red onion, copped
5 stalks celery, thinly sliced
2 C mayonnaise
1/8 C milk
1/8 C capers, drained
1 clove of garlic, finely minced or put through a garlic press
2 tsp salt
1/2 tsp ground pepper
When the macaroni is cooked to al dente (meaning firm to the bite, not too mushy and no longer crunchy) remove and drain and rinse with cold water to keep it from continuing to cook.
Use good quality frozen peas without freezer burn. You want them to be the brightest green possible, so do not cook them. I defrosted mine by putting them in cool water for a few minutes. It’s okay if they are still a little frozen when you add them to the macaroni; they’ll hold their shape better when you are mixing them that way. 
Mix the peas in gently with the macaroni.
Add the other chopped and sliced vegetables and mix thoroughly.
In a separate bowl, mix together the mayo, horseradish sauce, milk, capers, salt, and pepper. You may have to adjust your salt and pepper to taste. 
Mix wet ingredients into macaroni mix with a large spoon, or your hands.
Cover with plastic and refrigerate until ready to serve.
I think the secret was the horseradish which I’ve never used in macaroni salad before. I can’t believe how many seconds, thirds and fourths of this salad I watched people have. This was the one dish that people kept coming back to eat. Definitely a winner.

*If you don’t have any Woeber’s Horseradish Sandwich Sauce you can easily make your own. Just add 1-2 tsp of creamed horseradish to 1/2 C. sour cream, miracle whip, or any other sandwich spread.

BlogHer 2011; It’s Party Week!

Ever since I registered for BlogHer 2011 I’ve been thinking about all the great Break-Out sessions I’m going to attend, the inspiring speakers I’m going to get to hear, and the entire day I get to spend with The Pioneer Woman, Ree Drummond, (yes, that was me dropping her name) on Pathfinder Day. But apparently I’ve missed the real point of BlogHer. I think my ticket says it all, don’t you?

I headed over to Mom Spark to check out the BlogHer party schedule and my head is spinning. So now that I understand that I’m obviously going to one big Partay, I thought I’d make this week “Party Week” at Chloe Chronicles. And just like any good party, our party is going to be jam-packed with food, fun and frivolity.

This past weekend I created two new potluck recipes that I can’t wait to share that I know you are going to enjoy and I promise you that neither one is a Jello Salad. I’ll be sharing those recipes this week along with the recipe for the yummiest German Chocolate Cake icing you’ve ever had.. It’s so delicious and easy you’ll never use canned icing again.  I’m also hoping I can get my friend and Chronicle reader, T, to share with us her secret recipe for the VERY BEST COSMOPOLITAN you’ve ever tasted in your life. T’s Cosmos are so delicious your guests will be clamoring for more. Towards the end of the week, I’ll be giving away my top ten tips for throwing a great party. It really isn’t as hard as you think.
